Minim Wines is the love-child of Tim Sproal and is built on a simple philosophy - local fruit, grown well and handled simply. Started from a mate’s garage, Tim's less-is-more winemaking approach lends itself to the clean, energetic and textured natural wines Minim is known for.
Sustainability
Minim Wines are produced in small batches from a co-operative in Castlemaine. Tim sources small parcels of fruit from Central Victorian vineyards that farm with care - some being organic and some moving that way. Minim have started growing some of their own grapes and are committed to practicing regenerative agriculture techniques on this land.
